The Watkins-Sully family originate from the border town of Chepstow in the picturesque Wye Valley. Perched between Monmouthshire and Gloucestershire Chepstow is surrounded by some of the United Kingdom's oldest traditional cider making heritage.

They relocated to Australia in the 1980s and for the next 15 years worked in various locations throughout the Asian-Pacific region. In 2000 the family were all back in Sydeney and made a decision to look for a rural business where they could work together. By 2001 they had relocated to Braidwood and were running the Braidwood Deli, which they continued to do successfully for the next six years.

In 2007 they purchase a disused 1920s Cheese factory in the remote rural district of Reidsdale. A grant from Aus Industry allowed them to renovate the old factory and a new venture was born in August 2008. Passionate about reviving food heritage they have rejuvenate the old factory to, once again, be a hub of local production.
